No Tin Tucker

This one’s from another Flip Shelton Green recipe called Three Tin Tucker. You saute some garlic and a hot red chilli or two, then add a tin of crushed tomatoes, a tin of peas and a tin of cannellini beans, some tabasco sauce and seasonings, simmer for ten minutes, then serve with toast. A while ago I started using frozen peas instead of a tin, because they’re much nicer. Then I got my food processor and started pulverising the tomatoes myself. And yesterday I soaked and boiled some dried beans (great northern beans?), eliminating yet another tin. Either way it’s delicious.

  1. yum! my fave way to eat cannelini beans is to make dip – 1 drained tin with a garlic clove, chopped rosemary and 1 tablesp lemon juice. blend 1 min, add 2 tablesp extra virgin olive oil while blender still running.
